These super chocolaty squares have only 51 kcal each, are very easy to make and really delicious. They are a lighter version of the classic "fudge" a type of sweet originally from the United Kingdom, delicious but very caloric. In this version the sugar is replaced with dates but you can use another type of sweetener experimenting a bit to find the desired sweetness. They are perfect sweets for adults and children, much more satisfying than a chocolate and super healthy.
In addition to being healthy and light, these sweets are also gluten-free, lactose-free and vegan.
Dark chocolate fudge
Ingredients (Doses for 64 squares)
- Spray oil for light cooking
- 225g of pitted dates
- 400g of 70% sugar-free chocolate
- 80g of coarsely chopped hazelnuts or walnuts
- 1 pinch of salt
- 1 teaspoon of vanilla extract
Method
1) Spray a 20cm x 20cm square pan with light oil and cover it with baking paper
2) Melt the chocolate in a double boiler (or in the microwave)
3) Soak the dates in boiling water for 10 min. Drain them keeping aside a 115ml of water. Put them in the blender with the vanilla extract and a pinch of salt. Then add a little of the cooking liquid kept aside and blend until you get a homogeneous purée. Add the melted chocolate. Evaluate whether you need to add the remaining liquid or not.
4) Transfer the mixture to the pan, level well and garnish with the coarsely chopped nuts
5) Place in the refrigerator for at least 2 hours then cut into cubes (about 64 should come out) The sweets will keep in the refrigerator for about 2 weeks
