Mozzarella pizza, low carb and keto

You haven't read wrong, in this recipe the mozzarella is part of the pizza dough. A very particular dough but absolutely delicious especially if you are a cheese lover and follow a low carbohydrate diet. Do you think it's not possible to make a pizza with these ingredients good? Try it and you will change your mind!

Ingredients for 1 pizza of 8 slices:

  • 150g + 65g of grated mozzarella
  • 2 tablespoons cream cheese
  • 1 egg
  • 72g of superfine almond flour
  • About 55g of tomato sauce (without sugar)

Choice of garnish from peppers, mushrooms, olives, etc

Preparation:

  1. Preheat the oven to 200° (ventilated)
  2. In a large bowl suitable for the microwave, mix 150g of chopped mozzarella with the spreadable cheese and cook for 30 seconds, mix well and cook for another 15 seconds, continue like this until it becomes a smooth and creamy mixture
  3. Add the egg and almond flour and mix everything with your hands, clean and lightly oiled until all ingredients are incorporated. Form a ball (I know it's very sticky but that's normal)
  4. Prepare a large pizza pan with the baking paper and roll out the dough into a circle of about 25cm in diameter (be careful, if you use a rolling pin, put the dough between two sheets of baking paper or it will all stick to the rolling pin)
  5. Prick the pasta with a fork (breasts swell too much) and cook for about 8 minutes, the surface should start to get darker in some places and bubbles will form. Remove the base from the oven and let it rest for 5 minutes.
  6. Distribute the tomato sauce on the base leaving a small free edge around it, then sprinkle it with half of the remaining mozzarella, put your favorite vegetables on top and lastly the remaining mozzarella.
  7. Bake for another 8 minutes, until the cheese has melted and a nice crust has formed.

Cut into 8 wedges and serve!
