Healthy Donuts Lemon and Chia Seeds

Donuts are those American sweets that are usually eaten for breakfast, a classic of US TV series is the box of donuts brought to the office to offer breakfast to colleagues. This version is not fried and this already makes it healthier but it is also gluten-free and without the use of refined sugars.

Ingredients for 6 donuts:

  • 75g of almond flour
  • 40g of coconut flour
  • 1/2 tablespoon of baking soda
  • A pinch of salt
  • 3 large eggs
  • 3 tablespoons liquid sweetener of your choice
  • 3 tablespoons of melted coconut oil
  • 1 lemon (the peel and juice)
  • 1 tablespoon of chia seeds
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of collagen powder

For the pink glaze:

  • 6 chopped strawberries
  • 2 tbsp melted coconut oil
  • 1 tablespoon unpasteurized honey (raw)

Preparation:

  1. Preheat the oven to 180° and spray a 6 donut silicone mold with spray oil.
  2. In a large bowl mix the flours, baking soda and salt then add the other ingredients and mix everything well until it becomes a smooth and soft mixture
  3. Put the batter into the donut molds and bake until they brown a little and the pastry puffs up slightly (about 20 minutes) then let them cool for 15 minutes before removing them from the molds using a knife if necessary
  4. Meanwhile, prepare the glaze by combining the chopped strawberries, coconut oil and honey in a saucepan. Cook for 3 minutes over medium heat then let it cool for five minutes before pureeing everything in the food processor (or with the stick blender). When the cream is fluid and homogeneous, spread it on the donuts which you can then garnish as you prefer, for example with dehydrated strawberries or chopped dried fruit. You can freeze them or store them in an airtight container at room temperature for a few days)

280 calories | 22g Fat | 17g Carbs (5g Fiber and 9g Sugars) | 11g Protein
