Fit Food's Ketomix Universal allows you to prepare many different doughs including pasta with few carbohydrates in a simple way and without requiring great cooking skills. This recipe can be made both with the planetary mixer and with the food processor, I don't recommend it by hand because it becomes really a bit tiring to mix everything well.
Low carb pasta with Universal Ketomix
Ingredients for two portions
- 50g of Ketomix Universal Fit Food
- 2 medium eggs
- 15g of olive oil
- 3g of xanthan gum
Preparation
- Mix the 2 eggs well with 40 grams of ketomix (robot, mixer or manual) until you get a crumbly dough.
- Add the olive oil, stir for another 2 minutes, then sprinkle 3 grams of xanthan gum on the countertop.
- Remove the dough from the food processor and knead for 5-6 minutes, until all of the xanthan gum is absorbed.
- Sprinkle the remaining 10g of ketomix on the work surface and roll out the dough to the desired thickness.
- Now you can use a machine to make pasta or cut it by hand to the desired shape.
- Arrange the dough thus obtained on a baking sheet covered with baking paper, in a single layer, and let it dry for 4-8 hours.
This keeps it in the refrigerator for a few days.
