Fat-free blueberry pancakes

These fat-free pancakes are really fluffy and delicious, great for a light breakfast and just garnish them with fresh fruit and maybe a sugar-free sweet syrup and they also turn into a great dessert.

Ingredients for one serving:

  • 35g of gluten-free oatmeal
  • 1/2 scoop vanilla protein powder (or plain)
  • 1/2 teaspoon instant yeast
  • 2 large egg whites
  • 1 teaspoon of sweetener
  • 1 teaspoon of vanilla extract
  • 60ml of oat milk
  • 1 spoonful of lemon juice
  • 1 teaspoon organic lemon zest
  • A handful of fresh blackberries (or blueberries or berries)

Preparation:

  1. In a large bowl combine the flour, protein and baking powder and mix well then add all the other ingredients and beat them together (I use a hand mixer not very high speed) so that there are no more lumps.
  2. Heat a pancake pan or non-stick pan and cook the pancakes on both sides (when they start to bubble, it's usually time to turn them over)
  3. Serve them with blackberries and a sweet syrup of your choice.
