These fat-free pancakes are really fluffy and delicious, great for a light breakfast and just garnish them with fresh fruit and maybe a sugar-free sweet syrup and they also turn into a great dessert.
Ingredients for one serving:
- 35g of gluten-free oatmeal
- 1/2 scoop vanilla protein powder (or plain)
- 1/2 teaspoon instant yeast
- 2 large egg whites
- 1 teaspoon of sweetener
- 1 teaspoon of vanilla extract
- 60ml of oat milk
- 1 spoonful of lemon juice
- 1 teaspoon organic lemon zest
- A handful of fresh blackberries (or blueberries or berries)
Preparation:
- In a large bowl combine the flour, protein and baking powder and mix well then add all the other ingredients and beat them together (I use a hand mixer not very high speed) so that there are no more lumps.
- Heat a pancake pan or non-stick pan and cook the pancakes on both sides (when they start to bubble, it's usually time to turn them over)
- Serve them with blackberries and a sweet syrup of your choice.
