Avocado, Cucumber and Apple Salad

Easy to make, good and very healthy, this avocado salad with apple and cucumber is really a different idea to enjoy avocado. If you accompany it with a source of protein, it turns into a perfect lunch.

Ingredients for 4 portions:

  • 2 cucumbers
  • 2 avocados not too ripe
  • 2 apples (Pink Lady or Gala in short, not too sweet and crunchy)
  • 125g plain yogurt (fat or whole of your choice)
  • 25g of dried cranberries
  • 30g of coarsely chopped walnuts
  • 6-7 chopped mint leaves


  1. Cut cucumbers, avocados and apples into small, roughly equal pieces.
  2. Mix the walnuts, mint and cranberries into the cold, refrigerated yogurt. Leave it for five minutes to infuse and then season the salad with this sauce.
