Vegan and gluten-free omelette, easy recipe

After talking about how to replace eggs to adapt recipes to the vegan diet, here's a very quick recipe that uses chickpea flour. Vegan omelettes are delicious and you can stuff them as you prefer, once you learn how to make the base they lend themselves to a thousand variations.

Ingredients for an omelet:

  • 30g of chickpea flour
  • 78ml of water
  • 1 tablespoon nutritional yeast (optional)
  • 1 pinch of salt and pepper
  • 46g of vegetables of your choice
  • 1 tablespoon of oil for cooking

Optional:

  • Vegan cheese for filling

Preparation :

  1. In a bowl combine the chickpea flour, baking powder, salt and pepper and mix well until it becomes a lump-free batter (don't taste it, raw chickpea flour sucks!)
  2. Apart, cut the vegetables into cubes and sauté them in a non-stick pan with very little oil so that they are almost cooked, let them cool for a few minutes (you can also reuse an advanced side dish of vegetables) and then add them to the batter, stirring so that they are well distributed in the compound.
  3. In a non-stick pan (if you want the star of the vegetables) add the remaining oil to cook and heat over medium heat (it shouldn't fry, less than a minute is enough) then overturn the batter and spread it out so that it is a single uniform layer. Cook for 5 minutes (if you want the last two you can cover it with a lid but not for too long or it will be too moist).
  4. With a spatula, gently flip the omelette and cook for another 3-5 minutes until there are no more moist spots in the center (did I mention raw gram flour sucks?).
  5. If you want to add the vegan cheese, do it right now by folding a flap over to cover the cheese and let it melt. Remove from heat and serve!

NB This type of omelette tends to stick a lot so make sure the pan is non-stick and that you use enough oil to cook it
