Eggs, how to replace them in vegan recipes

There are many recipes that contain eggs, especially when it comes to desserts. Those who follow a vegan diet, unable to use products of animal origin, need to find a way to replace eggs so that the final preparation is not loose or of the wrong consistency.

Here are some great egg substitutes suitable for vegans:

Flax seed

Flax seeds are an excellent binder to use instead of eggs in desserts but also in meatballs.

To replace an egg, mix a tablespoon of ground flaxseed with 3 tablespoons of warm water and leave

The mixture for an hour in the fridge before using it.

Aquafaba

Aquafaba is the water left over from draining canned chickpeas and adds lightness and structure to desserts. It is perfect for making mayonnaise, dressing sauces but also desserts and even ice cream.

To replace an egg, mix 3 tablespoons of aquafaba with 4 tablespoons of granulated sugar.

Mashed banana

To make thick desserts such as muffins, brownies or pancakes, one egg can be replaced by about 110g of mashed banana. It adds body and creaminess although in some cases the end result may be too wet so when using banana add a little extra cornstarch or flour to compensate.

chickpea flour

A must in Indian cuisine, chickpea flour can be used in many ways in vegan cuisine. It works as a binder and is ideal for pancakes, omelettes and meatballs. It is high in protein, low in fat and gluten free.

To replace an egg, mix 2 tablespoons of chickpea flour with 3 tablespoons of water and mix well until a homogeneous mixture is obtained.
