Vanilla ice cream, quick and light

This ice cream is super light, sugar free and easy to prepare (even without an ice cream machine). Everyone likes the vanilla flavor a bit but you can obviously change it with different flavors as you like.

Ingredients for 4 portions:

  • 240g 0% fat Greek yogurt
  • 240ml milk with 2% fat (do not use vegetable milk, it doesn't turn out as well)
  • 1 and a half teaspoon of vanilla extract
  • 1 teaspoon stevia drops (preferably vanilla)
  • 1/2 teaspoon xanthan gum
  • 1 pinch of salt

Preparation :

  1. The night before, put the bowl of the ice cream maker in the freezer (the ice cream maker is much better, I warn you).
  2. In a large bowl combine all ingredients and use the electric mixer for about 1 minute until combined.
  3. Quickly take the basket of the ice cream maker out of the freezer (it must be as cold as possible), put the mixture in it and let it go
  4. For 15/20 minutes until it reaches a nice consistency. Serve immediately, it tastes better.
  5. If you don't use the ice cream maker, put the mixture in a flat freezer container, leveling it as much as possible. Leave it in the freezer for 2-3 hours then
  6. Take it out and mix the mixture by breaking the pieces of ice with a spatula every thirty minutes until you have a good consistency.
