Keto Strawberry Mousse

This mousse is truly delicious and low in carbohydrates, lactose and sugar free. It is prepared quickly and can be a delicious dessert at the end of a meal or even a delicious snack.

Ingredients for 6 servings:

  • 240g of coconut cream* (in a can)
  • 300g of strawberries
  • 3 sheets of gelatine (about 5g powdered)
  • 2 tablespoons of powdered sweetener
  • 1 tablespoon of lemon juice

*If you can't find coconut cream you can use canned coconut milk but you have to put the can in the fridge the night before so that the solid part separates from the liquid and then use only the solid one for the recipe

Preparation:

  1. Put the gelatin sheets in a saucepan with the water and let it soften (about 5 minutes)
  2. Place the washed and halved strawberries (no green parts) in a food processor or bowl if using an immersion blender. Blend them until they become a cream.
  3. Put the powdered sweetener in the saucepan with the gelatin and heat so that they both melt, don't bring it to the boil, they just have to melt.
  4. Combine the coconut cream with the strawberries, mix well then add the jelly and sweetener mix and the lemon juice (at this point taste a little and, if necessary, adjust the flavor with another sweetener)
  5. Put the mousse in cups or glasses (there should be 6 of about 100g) and leave in the refrigerator for at least 5 hours.
