There are many ways to prepare low carb gnocchi in which potatoes or flour are obviously not used. This version is one of my favourites, very simple and the gnocchi are so tasty that a little butter and sage and a sprinkling of Parmesan as a condiment are enough to have an excellent, complete and satisfying dish, especially when the temperature starts to drop.
Keto dumplings
Ingredients for 3 portions
- 1 mozzarella (about 220g) chopped and squeezed
- 3 egg yolks
- salt and pepper to taste (if you like you can add some herbs or spices to the mixture, without exaggerating)
Preparation
- 1) Melt the mozzarella in the microwave
- 2) Combine the egg yolks with the cheese one at a time, stirring until fully incorporated then season with salt and pepper
- 3) Divide the "dough" into 4 balls and put them in the fridge until they firm up
- 4) Roll out each ball into long "snakes" then, with a sharp knife, cut pieces of the same size that will be your gnocchi
- 5) Bring a pot of water to a boil and salt it lightly
- 6) Boil the gnocchi for 2 minutes
- 7) Drain the gnocchi and serve with the sauce of your choice
