Keto bread toast with avocado

This low-carb bread is suitable for the ketogenic diet but also for those just looking to limit their daily carbohydrate intake. The recipe, once the bread is out of the oven, is really simple but very tasty if you love avocado and know its many qualities you absolutely must try it.

Ingredients for 6 servings:

For the bread:

  • 25g of coconut flour
  • 2 tablespoons of ground flaxseed
  • 1 tablespoon of flax seeds
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 120g of almond butter
  • 120g of cashew butter
  • 4 large eggs at room temperature
  • 60ml of unsweetened almond milk
  • 1 tablespoon of apple cider vinegar

For the topping:

  • 1 avocado (or more depending on size)
  • Lemon juice
  • A pinch of salt

Preparation:

  1. Preheat the oven to 150° by positioning the racks in the lower central part of the oven. Now fill a large, high-sided roasting pan with water and place it on the lowest rack of the oven. Spray a loaf pan of about 20cm x 10cm well with spray oil, line it with baking paper and spray the paper with oil too (do not underestimate this step or everything will stick).
  2. In a small bowl, combine coconut flour, ground flaxseed, baking soda, and salt.
  3. With the electric mixer, in a larger bowl, mix well the butters and egg yolks. When well mixed add the almond milk and vinegar. Use the slammer for a moment to mix everything well and then pour it into the flour mix.
  4. In a clean bowl, whip the egg whites (also clean the beater well if it's the same one you used before) until they swell well. When the egg whites are well whipped, add them little by little, with a spatula and a bottom-up movement, to the butter, egg and flour mixture. Incorporate all the ingredients well, checking there are no lumps, in case you break them with a fork.
  5. Transfer the dough into the mold you had prepared, sprinkle it with flaxseed  and cook it for 45-50 minutes until it takes on a nice golden colour. Let it rest like this for 15 minutes before removing it from the mold and letting it cool completely, only then cut it into 12 slices.
  6. To prepare a portion of  avocado toast toast two slices of bread and blend half an avocado with the lemon juice, adjusting the salt according to your taste.

You can keep the leftover bread wrapped in foil in the refrigerator for 3 days.
