These biscuits with chocolate chips are very easy to prepare, really greedy and are yet another example of how the Lo Dough pizza base can really be used in many different ways, taking advantage of the fact that it has only 39 kcal and therefore allows a considerable cut of calories and a neutral taste that lends itself to both sweet and savory recipes.
Cookies with chocolate chips
Ingredients (2 servings)
1 finely blended Lo Dough base
16g of softened butter
14g of Sukrin : 1 (erythritol + stevia, sweetens like sugar)
1 small beaten egg
1/2 teaspoon vanilla extract
1 pinch of salt
10g unsweetened chocolate chips (or coarsely chopped flakes)
Method
1. Preheat the oven to 200°C
2. Place the butter and sweetener in a bowl and beat with electric mixers.
3. Add all other ingredients except the egg and mix well with a spoon, then slowly add the egg a little at a time (you may not need everything). Knead with your hands until you have a solid ball of dough.
4. Divide the mixture into two equal balls. On a baking sheet greased and dusted with fiber flour (a silicone mat would be ideal, in this case you don't need to grease or flour), flatten the balls into two flat discs. They should be about 0.5cm thick.
5. Cook for 7 minutes.
6. Once cooked, place them carefully on a wire rack to let them cool down a bit.
They can be eaten after about 10 minutes or left to cool completely.
