Cream of tartar is a natural and super versatile ingredient in the kitchen, being gluten-free it is also suitable for coeliacs. It is a natural acid salt that is formed during the production of wine. It is a white and crystalline product, odorless and with a slightly acidic taste whose best known use is as a leavening agent but it would be simplistic to consider it only an alternative to yeast.

Here are some of the possible uses of cream of tartar in the kitchen:

Leavening agent: Cream of tartar can be used as an alternative leavening agent to baking powder. When combined with baking soda and activated with an acidic liquid such as lemon juice or vinegar, it produces carbon dioxide, thus creating the leavening effect in dough.

Stabilizer for merengues and creams: Cream of tartar is often used to stabilize egg white preparations such as merengues and creams. Added to egg whites before beating, it helps stabilize the structure and prevent collapse, thus keeping the texture light and fluffy.

Anti-crystallising for sugar: Adding a small amount of cream of tartar to sugar in syrups or candies can prevent unwanted crystallization and maintain a smooth and uniform texture.

Increasing the acidity of baked goods: In some recipes, such as in the case of meringues, the addition of cream of tartar can help achieve a balance of acidity in the finished product, improving structure and texture.

Stabilizer for whipped creams: Cream of tartar can be used to stabilize whipped creams, helping to maintain the fluffy texture and preventing collapse.

You will not find a nutritional table because it is a food additive and by law this type of ingredient must not have it considering that the dose used is a few grams, the nutritional intake can be considered close to zero.

Instructions

To use it as baking powder, mix 2 teaspoons of tartar with 1 teaspoon of baking soda - you'll get 3 teaspoons of baking powder

To stabilize and increase the volume of egg whites: add 1/4 teaspoon of cream of tartar to make 4 egg white meringues
