Clarified Butter - Ostrovit

Clarified butter is also known as ghee, it is concentrated butter without water. A kind of super butter. The Milanese know it well, it is what is used to fry the real Milanese cutlet. Over the years it has become increasingly famous with the success of ketogenic diets, it is certainly a concentrate of fats but we are talking about animal fats so it is always better not to overdo it.

The big advantage of ghee or clarified butter, if you prefer, is that being concentrated, much less is needed (usually butter contains a part of water and makes less) and above all it is exceptional for frying because it has a very high smoke point ( for this reason it is used for the cutlet which, if fried in oil, for example, is almost always burnt on the outside and raw on the inside).
