An excellent banana bread organic mix with few organic ingredients and no refined sugar added. Banana bread is an excellent sweet, delicious and at the same time healthy if prepared with few ingredients as in this case. Suitable for young and old, perfect for using ripe bananas and for freezing slices to always have a portion ready when you want a snack or a simply healthy sweet breakfast.

Max de Genie is a French company born from the passion of two boys (Maxime and Eugenia) who wanted to combine a healthy and at the same time delicious diet by minimizing the glycemic index of their sweet products which are all without refined sugars and use stone-ground flour in their mill south of Paris. The flour ground in this way contains the germ of the cereal, the richest part of the grain. In fact, the germ of the cereal contains proteins and micronutrients in high quantities: vitamins B and E, mineral salts, trace elements, amino acids and essential fatty acids.

4 bananas (= 440 g peeled)

– Very ripe: for more taste

– Less ripe: a lower glycemic index

4 eggs

Preparation 

  • Preheat the oven to 180°C and place the rack in the lower part of the oven.
  • Peel the bananas and mash them with a fork. Add the eggs, mix.
  • Once the mixture is homogeneous, add the mixture.
  • Mix until a homogeneous mixture is obtained.
  • Grease a 24cm loaf pan and pour the batter into it. (you can sprinkle the surface with nuts or chocolate chips for an even more delicious result).
  • Make sure the oven is at 180°C and cook for 40-45 min. (Check doneness by inserting a toothpick in the centre. It must come out clean)
  • Let it cool before consuming it.

Tip: you can make mini Banana Breads in muffin molds (cooking time: 20/25 min)

Keep it in a cool place once ready

You can also cut the banana bread into slices and freeze them, when you want to eat them, just heat them in the toaster
