I had already proposed another scrambled tofu recipe but this is definitely the best I've tried so far. Quick and easy, you just have to decide if you prefer a creamier result or if you prefer little pieces of tofu in the final mixture (in this case, choose a tougher consistency tofu). Easy, fast, vegan, gluten-free and lactose-free recipe, therefore really suitable for everyone.
Ingredients for 2 portions
- 1 package of tofu*
- 1 tablespoon of olive oil
- 1 small onion, finely chopped
- 3 cloves of garlic finely chopped (if you like)
- 1 pinch of turmeric powder
- 1/2 tablespoon paprika powder
- 3 teaspoons nutritional yeast
- 2 teaspoons of tamari sauce
- Salt and pepper
Preparation:
- Crumble the tofu with your hands (or in the food processor but with your hands is better)
- Heat the oil in a non-stick pan over medium heat then add the chopped onion and garlic and cook for about two minutes
- Add the tofu, turmeric, paprika, nutritional yeast and Tamara and mix everything together
- Let it cook for 2-3 minutes without stirring, then give it a stir and let it cook for another 2-3 minutes without touching it
- Remove from heat and season with salt and pepper after tasting
* Depending on your taste you can use harder or less hard tofu, choosing the softer one you will have a creamier result if instead you like to have harder little pieces of tofu (I prefer it this way) use "firm" or "extra firm"
