Sweet quinoa with apples and cinnamon

An unusual use of quinoa that is usually found in savory recipes. My grandmother made me sweet rice and milk as a child and the concept is not very different, using a cereal (or rather pseudo-cereal) in a sweet dish is done in many cuisines around the world. Quinoa is full of healthy properties so why not try a different breakfast? Healthy, delicious, gluten-free and low in fat.

Ingredients for 2 servings:

  • 90g of quinoa
  • 355ml of water
  • 2 large apples
  • Sweet syrup according to taste

Method:

  1. Peel and core the apples, cut them into small pieces
  2. Place the apples, quinoa and water in a saucepan, bring to a boil then cover and set the heat to a simmer for 20-25 minutes by which time the apples should have softened and the quinoa absorbed all the water.
  3. Add the cinnamon and mix well. Gift with the sweet syrup of your choice.


This is the base that lends itself to multiple additions, I like to add something crunchy like coarsely chopped dried fruit which also improves the protein intake of the recipe.
