An unusual use of quinoa that is usually found in savory recipes. My grandmother made me sweet rice and milk as a child and the concept is not very different, using a cereal (or rather pseudo-cereal) in a sweet dish is done in many cuisines around the world. Quinoa is full of healthy properties so why not try a different breakfast? Healthy, delicious, gluten-free and low in fat.
Ingredients for 2 servings:
- 90g of quinoa
- 355ml of water
- 2 large apples
- Sweet syrup according to taste
Method:
- Peel and core the apples, cut them into small pieces
- Place the apples, quinoa and water in a saucepan, bring to a boil then cover and set the heat to a simmer for 20-25 minutes by which time the apples should have softened and the quinoa absorbed all the water.
- Add the cinnamon and mix well. Gift with the sweet syrup of your choice.
This is the base that lends itself to multiple additions, I like to add something crunchy like coarsely chopped dried fruit which also improves the protein intake of the recipe.
