Bagels, recipe to make them with low fat

Aug 11, 2020Barbara Arlati

Bagels are those round loaves with a hole in the middle that are eaten a lot in America but are also arriving in Italy. Their classic use involves spreading them with cream cheese (our Philadelphia) but they can be served in both savory and sweet versions. This recipe is sugar-free, low-fat and gluten-free, making them even healthier and lighter.

Ingredients for 4 portions:

  • 150g of flour (gluten-free, white or wholemeal)
  • 2 teaspoons of yeast
  • A pinch of salt
  • 250g of 0% fat Greek yogurt
  • 1 whipped egg white
  • Sesame seeds, optional

Preparation:

  1. Preheat the oven to 180°. Place a sheet of parchment paper on a baking sheet and spray it with cooking oil
  2. In a bowl combine flour, baking powder and salt and mix well. Add the yogurt and mix until there are no more lumps.
  3. Dust the work surface with flour and knead the dough with your hands. Knead about 15 times, the dough should come off easily from your hands at the end
  4. Divide into four balls and shape into bagels (for the central hole if you have cylinders or something similar that is oven safe making them look like bagels will be easier in the end, remember to spray them with oil spray though)
  5. Brush the tops of the bagels with the egg white and sprinkle them with the sesame seeds.
  6. Bake on the top shelf of the oven for about 25 minutes then let them cool for at least 15 minutes before cutting them.
