These piadinas are actually more than tortillas but calling them piadines makes the idea better since we are in Italy. A super tested and easy recipe to make even if you are not a great baking expert.

In any case, you know that you can stock up on delicious and ready-made Carbzone tortillas (in case these don't turn out good)

Ingredients for 8 tortillas

  • 96g almond flour
  • 24g coconut flour
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 2 teaspoons of apple cider vinegar
  • 1 lightly beaten egg
  • 3 teaspoons of water

Preparation

1. Add the almond flour, coconut flour, xanthan gum, baking powder and salt to the food processor. Blend until you get a homogeneous mixture

2. Pour in the apple cider vinegar while blending. Once it's evenly distributed, add the egg. Following the water. Stop the mixer once the dough has formed into a ball (it will feel sticky).

3. Wrap the dough in plastic wrap and knead it with your hands for a minute or two (like a stress ball) then let it rest for 10 minutes (or up to three days in the fridge).

4. Heat a nonstick skillet over medium heat.

5. Divide the dough into eight balls (26 g each). Roll them out with the help of two sheets of parchment paper until they have a thickness of about Until each disc has a diameter of about 12.5cm

6. Cook them in the pan over medium heat for only 3-6 seconds (very important). Flip them immediately (using a thin spatula or knife) and continue to cook until lightly browned on each side, 30 to 40 seconds. The important thing is not to overcook them or they will become stiff.

7. Keep them warm wrapped in a tea towel until it's time to serve them.

8. These tortillas should be eaten right away. In the best case, keep the dough ready in the refrigerator and make a few at a time. You can also freeze them individually and in this case they last about 3 months.

Advice! Keep an eye on them when cooking as coconut flour burns very quickly. The pan in which you cook them must be very hot so that they can cook quickly, if the heat is not enough they will become hard
