This recipe allows you to obtain an excellent low carb sponge cake using the special NoCarb flour without carbohydrates.
Ingredients
- 85g of Nocarb flour without carbohydrates
- 150 g of sweetener (erythritol/xylitol/erythritol with stevia)
- 5 eggs
- 4 tablespoons of oil
- 150ml of water
- 1/6 teaspoon salt
- 1 sachet of baking powder
- Seeds of a vanilla bean / vanilla flavor
Preparation
- Separate the egg whites from the yolks. Mix the egg yolks with the vanilla, the 4 tablespoons of one and about 3/4 of the sweetener and mix until a uniform mass is obtained.
- Add the water and mix until you have a smooth cream
- Whip the egg whites until stiff with the rest of the sweetener and salt.
- Add the baking powder to the NoCarb fiber flour and then incorporate everything into the cream you made with the yolks.
- Pour half of the dough onto the egg white foam and incorporate it with circular movements, from bottom to top, using a silicone spatula.
- Add the rest and slowly incorporate using the same technique.
- Bake the sponge cake in a preheated oven at 180°C for 35-40 minutes or until it takes on a golden colour.
