Marshmallows with erythritol are a bit difficult to make but the work is amply rewarded: in fact, 24 marshmallows provide only 15 kcal and less than 4g of carbohydrates . Perfect for those who love their particular texture but don't like taking the maltitol which is present in most of the sugar-free marshmallows that are available ready-made.
This recipe can obviously be customized using other flavors and aromas, however the proportions are fundamental because Michela and Francesco (our fit chefs, you can find them on Instagram as HungryFitty ) made quite a few attempts before finding the "magic" formula to create them good like taste and texture.
Ingredients for 24 marshmallows
- 300ml of cold water
- 60g NoCarb Lemon Jelly or Creme Mix
- 130g of erythritol powder
- Flavor drops (lemon flavour)
- Spray oil to taste
- A pinch of salt
Method:
1) Line a square pan (20x20cm) with baking paper and lightly grease the paper with spray oil.
2) Pour 120ml of water into a blender and add the jelly mix. Blend well, put in a bowl with high edges and let it rest for 10 minutes.
3) Meanwhile, in a saucepan, add 180ml of water and the erythritol (you can also add Flavor Drops of your favorite flavor if you like). Mix well and bring to a boil over medium-high heat. Boil until the mixture reaches a temperature of 110°C (measure the temperature with a cooking thermometer).
4) Remove the syrup from the heat and pour it slowly into the bowl with the gelatin while blending with an electric mixer at minimum speed. Once all the syrup is mixed, add a pinch of salt. Switch to medium-high speed and blend until the mixture is warm, thick and white. This can take anywhere from 5 to 15 minutes.
5) Working quickly, pour the mixture into the prepared pan and smooth the top with a spatula. Let sit for 4-6 hours, until the top is no longer sticky to the touch, then flip onto a cutting board and cut into 24 cubes.
6) At this point put them on a grill and let them rest uncovered until they are completely dry (it takes about 24 hours).
7) Dust the cubes with powdered Erythritol to prevent them from sticking together.
