Quinoa can help prevent diabetes

Quinoa is a pseudo-cereal with excellent properties and a study published in Nutrients has shown that replacing common flours and cereal-based products with those made from quinoa can significantly reduce post-prandial glycemic peaks and thus help prevent the onset of diabetes of type 2 . This is only a pilot study but the surveys carried out on volunteers seem very promising indeed.

In the Spanish study, volunteers had blood sugar measured after "normal" meals, therefore including carbohydrates such as pasta and wheat bread, and then the same measurement was performed by replacing cereals with quinoa in the diet and products made with quinoa (pasta, bread etc) and the findings confirmed that blood sugar levels were lower after meals with quinoa.

Quinoa is a pseudo-cereal native to the Andes characterized by an excellent nutritional value, it contains minerals (iron, calcium and magnesium), vitamins (B, E and C) and a high percentage of protein compared to cereals. It also has a high level of unsaturated fats, antioxidants and polyphenols, which in turn have a beneficial effect on the cardiovascular system. It does not contain gluten and is therefore also suitable for coeliacs.

Type 2 diabetes, unlike Type 1, is a disease that nutrition and a healthy lifestyle can make an important contribution to preventing. There are more and more case studies of subjects who, thanks to nutrition, have managed to prevent a phase of pre-diabetes from leading to diabetes itself.
