The best keto pancakes

These pancakes are truly outstanding. Pancakes can be made in a thousand ways but try to make them with this recipe and you will see that it will win you over, even if you don't follow the keto diet or a low carb regimen. 

Ingredients for one serving:

  • 60g of spreadable cheese
  • 2 eggs
  • 1 teaspoon erythrol (or other granulated sweetener)
  • 1/2 teaspoon cinnamon (if you like)

Method:

  1. Put all the ingredients in a bowl and whip everything with an electric blender until it becomes a soft and lightly creamy sauce  frothy
  2. Let it rest for 5 minutes
  3. Spray a non-stick pancake pan (or in any case not too large) with spray oil
  4. Realize that 4 thin pancakes should come out so take a quarter of the batter and when the pan is hot cook the first one for about 2 minutes then turn it over and cook another minute. Do this for all 4 pancakes, if you see that they stick too much after the first two spray some more spray oil.
  5. Serve them with the garnish of your choice, fresh fruit, syrups, etc

The kcal and macronutrients of the recipe vary according to the spreadable cheese these pancakes are better with the normal type (fat around 29g, carbohydrates 3g and protein 17g) but you can also try with the Active or light one and see what comes out
