Banana Pecan Ice Cream

This very easy recipe is really a joker for sudden ice cream cravings, just put a few banana pieces in the freezer (which is always useful for healthier ice creams and also for smoothies) and in a few minutes you can enjoy a delicious and healthy ice cream with Pecan nuts without sugar and without lactose.

Ingredients for 4 portions:

  • 2 peeled bananas, cut into chunks and put in the freezer the night before
  • 1 teaspoon of vanilla extract
  • 2 heaping tablespoons pecans
  • about 60g of thick almond milk (the one in the can)
  • A pinch of salt

Preparation:

  1. If you have frozen the bananas in pieces the night before, otherwise you have to leave them in the freezer at least an hour before proceeding.
  2. Place the chopped bananas in the food processor and blend  well until creamy (about 5 minutes) then add the coconut milk, pecans, vanilla and a pinch of salt. Operate  the blender again, stopping it every now and then to ensure that everything blends well with the spatula, push upwards what is left on the bottom.
  3. Enjoy the ice cream!! The best with a little caramel syrup on top (there are some without calories but also naturally sweetened, you can choose)
