Cauliflower and cheese pancakes

A very easy and quick recipe for cheese enthusiasts, especially if you follow a low-carb diet like the ketogenic one. The idea is to replace the potatoes with cauliflower florets in order to reduce carbohydrates but, believe me, the final taste is really delicious.

Ingredients for 11 pancakes

  • 450g of cauliflower rosettes
  • 100g of minced cheese (more or less tasty depending on your taste, lactose-free if you are intolerant)
  • 2 large eggs
  • 2 tablespoons of coconut flour
  • 2 tablespoons finely chopped shallots (+ a little for garnish)
  • Olive oil

Preparation:

  • Grate the cauliflower with a food processor or a large cheese grater (it shouldn't turn into cream) then steam until softened.
  • Mix the minced cheese with the still hot cauliflower so that they mix well
  • Add the eggs and the chopped shallot and mix to obtain a homogeneous mixture
  • Put two tablespoons of oil in a non-stick pan over medium heat and when it becomes hot, gently place a dough ball in it which you will then flatten with a spoon to form like small burgers. Cook for a few minutes until it turns golden and when it seems that the lower part is cooked enough, turn it over (be careful if you turn it before the lower part is cooked, it will all squash) and cook for a few more minutes. Repeat with the other pancakes (obviously if you're handy enough you can make more than one at a time) if it seems that the oil has run out, add a little more waiting for it to return to temperature before placing another pancake in it.

These pancakes are already delicious on their own, perhaps served with a salad but if you want a truly successful combination, accompany them with a sauce of Greek yogurt, lemon juice and chives.
