Today I offer you these delicious scones that you can easily customize as you prefer by adding spices or aromatic herbs to the base dough.
Low carb Mediterranean focaccia
Ingredients for 6 muffins
- 1 pack of Light Simply Keto bread mix
- 500g of water
- 40g of apple cider vinegar
- 3 dried cherry tomatoes in oil
- 1 clove of garlic (or two if you like)
- 1 pinch of oregano
- 4 tablespoons of oil
- salt and pepper
Preparation
- 1) Preheat the oven to 180°C fan assisted.
- 2) Pour the mixture into a bowl and add 40 g of apple cider vinegar and 500 g of water (90 degrees) mix and work the dough until obtaining a homogeneous mass
- 3) Divide the dough into six equal parts, make balls and then, using two sheets of baking paper, roll them out thin with a rolling pin or with your hands. Arrange them on a baking tray lined with baking paper
- 4) Chop the dried tomatoes. Peel the garlic clove and chop it finely. Mix the sun-dried tomatoes, minced garlic and olive oil in a bowl. Season with salt and pepper.
- 5) Spread the filling on the scones, press the surface lightly with your fingers and bake for about 20 minutes at 180°C.
