Banana bread in the cup, light and fast

A very easy and quick recipe that requires very few ingredients. The ideal is to use a very ripe banana, if you don't have it you risk the banana bread not being sweet so add a teaspoon of powdered sweetener.

Ingredients for 1 cup of coffee:

  • 1/2 very ripe banana
  • A dash of vanilla extract
  • 2 tablespoons gluten-free flour
  • 1.5g of yeast
  • 1 pinch of salt
  • 1 teaspoon melted coconut oil (any other neutral-flavored vegetable oil will work too)

Optional Additions:

  • Chocolate chips or chopped dried fruit

Preparation :

  1. In a small bowl mix the mashed banana with the oil and vanilla
  2. In the cup you have chosen, combine flour, baking powder and salt and mix well with a fork before adding the banana cream
  3. Microwave for 90 seconds and allow to cool at least one minute before consuming

NB If you want to use a whole banana, choose a larger cup and double the doses, it is still a very light dessert.
