A very easy and quick recipe that requires very few ingredients. The ideal is to use a very ripe banana, if you don't have it you risk the banana bread not being sweet so add a teaspoon of powdered sweetener.
Ingredients for 1 cup of coffee:
- 1/2 very ripe banana
- A dash of vanilla extract
- 2 tablespoons gluten-free flour
- 1.5g of yeast
- 1 pinch of salt
- 1 teaspoon melted coconut oil (any other neutral-flavored vegetable oil will work too)
Optional Additions:
- Chocolate chips or chopped dried fruit
Preparation :
- In a small bowl mix the mashed banana with the oil and vanilla
- In the cup you have chosen, combine flour, baking powder and salt and mix well with a fork before adding the banana cream
- Microwave for 90 seconds and allow to cool at least one minute before consuming
NB If you want to use a whole banana, choose a larger cup and double the doses, it is still a very light dessert.
