Easy Coconut Yogurt

Do you think that making yogurt at home is something complicated that is not within your reach? Try this recipe and you'll change your mind... you just need a little time and to make excellent coconut yogurt you don't even need a yogurt maker. The result will surprise you. Light, vegan, sugar-free, lactose-free

Ingredients for 6-8 servings:

  • 200g of coconut cream
  • 300ml of hot water
  • 1 teaspoon of Stevia (or other natural sweetener but in that case calculate that it will easily sweeten much less than Stevia and therefore you will need a lot more, depending on your taste)
  • 1 teaspoon vanilla extract (or vanilla seeds if you have them)
  • 2 probiotic capsules or 0.25g probiotic powder (optional)

Method:

  1. In the food processor, mix the coconut cream with the hot water until it becomes softer (depending on the consistency of the coconut cream, add more or less hot water, it must not become liquid). Leave to cool for 15 minutes.
  2. Add the stevia, the probiotic powder (open the capsules and pour the contents into the mixture if you are not using the powder directly) and the vanilla.
  3. Put the cream in a perfectly clean jar of about 750ml-1 litre  and cover with a clean tea towel secured with an elastic band. Now it should stay at the ideal temperature of about 26° (so it's perfect to do in summer in winter you have to find the right place, perhaps in the boiler room or by wrapping the pot in a thermal blanket)
  4. Stir every six hours to prevent it from dividing, taste after about 24-36 hours and place in the fridge (it will keep for about a week).
