Gluten-free vegan tortillas, easy recipe

Tortillas are thin sheets in which to wrap dishes and in the world many populations use them instead of bread, calling them in different ways and using different methods and ingredients to make them. This version is vegan and also gluten-free but very easy to prepare.

Ingredients for 8 tortillas:

  • 190g of gluten-free flour
  • 1 teaspoon gluten-free yeast
  • 1/2 teaspoon salt
  • 2 tablespoons neutral vegetable oil (or spray)
  • 175ml of very hot water

Preparation:

  • Put the flour, yeast and salt in a large bowl then add the very hot water and the oil.
  • Mix with a spatula or wooden spoon until it becomes smooth enough to knead with your hands.
  • Knead until all liquids are absorbed
  • Start heating a non-stick frying pan over medium heat (it must be very hot, for tortillas a slightly thick plate with a handle is ideal, I don't know what it's called but you can find it for sale, like crepes). Spray it with vegetable oil (if you don't use that spray check that it is evenly greased)
  • Take some dough and form a ball the size of a golf ball, repeat 8 times. (While preparing the balls, cover the bowl with the dough with a cloth so that it does not dry out)
  • Place a ball of dough on a sheet of baking paper and flatten it with your hands to give it the shape of a disc, then place another sheet of baking paper on it and roll the dough with a rolling pin until you have a disc of about 18cm ( must be thin)
  • Put the tortilla in the non-stick pan and cook it for about 30 seconds maximum one minute per side, it must brown but not burn (if it is too hard it means that you cooked it too long or the fire was too high).
  • Remove the tortilla from the heat and place it on a plate covered with a clean tea towel. Continue like this with all the others, every 2/3 tortilla or when you see that you need to spray the pan again with spray oil or brush with vegetable oil.
  • When the tortillas are completely cold, you can store them in an airtight container in the refrigerator or freeze them individually (they keep in the freezer for about 3 months).

How do you use the tortilla? In a thousand ways! You can stuff it as you like, roll it up or cut it into triangles, put it in the air fryer and then dip it in humus…
