Light apple strudel with Lo Dough

A recipe in which the Lo Dough base that is usually used to prepare light pizzas is used in a sweet version. In fact, thanks to its neutral flavour, the Lo Dough base is perfect for pizzas and sandwiches but also as a base for desserts and this light version of apple strudel is a demonstration of the thousand uses you can make of it.

Just think that there are only 122 calories in a portion of this delicious apple strudel!

Apple Strudel with Lo Dough

Ingredients for a 4 portion strudel:

• 3 Lo-Dough bases

• 75 g of mixed berries (raspberries, blackberries and blueberries)

• 200 g of kitchen apples in cubes

• 100 g of diced pear

• 1 teaspoon of cinnamon

• 1 teaspoon of nutmeg

• 2 spoons of light caramel syrup

Butter-flavoured light oil spray

Powdered erythritol for garnish 

Preparation

  • Using a rolling pin, roll out each Lo-Dough base onto a clean flat surface. When the bases are well flattened and thin, position them  lined up with an overlap of plus or minus 7cm and lightly moisten the seams. Now roll them together, there should be enough moisture to stick them together.
  • Place the berries, apples, pear, cinnamon and nutmeg in a saucepan with the light syrup and a couple tablespoons of water and cook over medium heat for about 10-15 minutes or until softened .
  • Roll out the dough made of Lo Dough on a sheet of aluminum foil sprayed with butter spray cooking oil.
  • Once the fruit is cooked pour it directly into the center and along the length of the pastry leaving enough room to fold over the sides.
  • Carefully fold the Lo Dough base over the filling and crimp the ends. If needed, use an extra drop of water to make it stick. 
  • Spray everything with a little butter-flavoured cooking oil 
  • Wrap the strudel in the aluminum foil it is on and place it in a baking dish in the center of the oven. Cook for 25-30.
  • Take the strudel out of the oven and open the foil, then put it back in the oven for another 5-10 minutes until golden brown.
  • You can serve this strudel dusted with erythritol and with a light cream made with quark (or skyr or 0% creamy creco yoghurt and a dash of sweet vanilla syrup 0 calories)

Each serving of strudel has

122 kcal - 0.5g of Fat - 15g of Carbohydrates - 8.5g of Fiber and 12g of Protein
