Very few ingredients and ultra-fast preparation times make this vanilla ice cream suitable for everyone, even for those who don't have an ice cream machine. This low-carb, sugar-free vanilla ice cream is suitable for those on a keto diet, but being also sugar-free, lactose-free and vegan, it really is suitable for everyone!
Ingredients for 5 servings:
- 460g of canned coconut milk (non light)
- 65g of erythrol
- 0.6g of salt
- 6g of vanilla extract
Preparation
- In a bowl mix the coconut attention, erythrol (or other keto friendly sweetener), salt and vanilla extract.
- With an ice cream machine: insert the mixture and let it do all the work.
- Without an ice cream maker: put the mixture in an ice cube mold and put it in the freezer, when it is frozen put the cubes in a blender suitable for crushing ice and blend until obtaining a homogeneous mixture, consume it like this or put it back in the freezer for an hour before eating it.
- Having no preservatives or stabilizers, this very simple ice cream is best eaten the same day but can also be kept for a month in the freezer.
