Vanilla Keto Ice Cream

Very few ingredients and ultra-fast preparation times make this vanilla ice cream suitable for everyone, even for those who don't have an ice cream machine. This low-carb, sugar-free vanilla ice cream is suitable for those on a keto diet, but being also sugar-free, lactose-free and vegan, it really is suitable for everyone!

Ingredients for 5 servings:

  • 460g of canned coconut milk (non light)
  • 65g of erythrol
  • 0.6g of salt
  • 6g of vanilla extract

Preparation

  1. In a bowl mix the coconut attention, erythrol (or other keto friendly sweetener), salt and vanilla extract.
  2. With an ice cream machine: insert the mixture and let it do all the work.
  3. Without an ice cream maker: put the mixture in an ice cube mold and put it in the freezer, when it is frozen put the cubes in a blender suitable for crushing ice and blend until obtaining a homogeneous mixture, consume it like this or put it back in the freezer for an hour before eating it.
  4. Having no preservatives or stabilizers, this very simple ice cream is best eaten the same day but can also be kept for a month in the freezer.
